Pig, pig and more pig





We began the day at the Zydeco Breakfast at Cafe des Amis in Breaux Bridge, where Thomas Big Hat Fields and his band entertained us over bacon and eggs.

From there we headed to Eunice for the jam session at the Savoy Music Center but we stopped before for hot boudin at the Eunice Slaugherhouse and Suprette. Boudin is ground pork, spices and rice in sausage casings. At the jam we caught up with old friends, and listened to the oldtimers play.

Next stop was the Swine Fest in Basile where we tasted some of the pit and pot pork in the pork cooking festival, with barbecue and sauce piquant.

After a few hours rest, we headed out to the Black Pot Festival where we caught the end of the cooking competition - more pork, a bit of alligator and lots of cracklins.

We began the day yesterday with bacon and eggs and Thomas Big Hat Fields at the Zydeco Breakfast at Cafe Des AmisThe music was wonderful, with Balfa Toujors, Matt Kinman, the Mayhem String Band, Racines and the host band The Red Stick Ramblers.
